How do you turn a story into a dish?

In our case, dishes often arise from previous experiences or the seasonality of the ingredients. We focus on making the most of seasonal products when they are at their best, seeking to reflect that seasonality in our dishes. Rather than telling stories ourselves, we prefer the kitchen to tell us something.

We don't create dishes based on personal anecdotes, such as the typical reinterpretation of a family recipe. Instead, we create dishes that respond to the ingredients available at the time, adjusting to what we need to meet the demands of the menu. Each dish is born from what the market and the season give us, and although sometimes we get it right and sometimes we get it wrong, that's the way we work.

 

The most important thing is the functionality and convenience of the tableware. For example, if we prepare a spoon dish, we look for a piece that is deep enough for the portion and easy to handle. For soups or desserts, we tend to use small bowls, as these dishes require more help from a spoon than from a fork and knife. Also, when it comes to casseroles or spoon dishes, we choose deep plates that allow us to mix the ingredients comfortably.

A must-have ingredient in your kitchen/menu this spring

This spring, we are very focused on what the season has to offer. It is true that this year there seems to be a season of white asparagus from Tudela de Duero, and we are incorporating this ingredient in many of our dishes. We also use peas and snow peas, which are ingredients that fascinate us. Although we don't do an excessively vegetable-based cuisine, we always try to include something green in our dishes.

Asparagus, artichokes and peas are ingredients that are a must in our kitchen this season. As for fish, turbot is another fundamental ingredient for us, especially in spring, when large pieces appear, which is what we are looking for. We use turbot from 5 and a half kilos upwards, a key ingredient both for main dishes and for preparations that require large pieces.
