Behind Pabú’s concept is a devoted chef: Coco Montes not only runs the kitchen, he lives each service with the passion of someone who sees gastronomy as an act of generosity.
His eyes light up when he talks about the sea, Atlantic produce, and the fish that arrives fresh every morning. During his breaks, there’s always a knowing smile, a small story about how he discovered a special ingredient or how he managed to make the most of a challenging season. For him, every returning guest is not just a diner — they’re someone who shares dreams, expectations, and moments.
This warm, human spirit is part of Pabú’s DNA, a restaurant born from Coco’s desire to create a place in Madrid where tradition is renewed every day and the product sets the pace for creativity. After training in iconic kitchens such as L’Arpège in Paris, with three Michelin stars, he brought with him not only technique and discipline, but also a unique sensitivity to listen to the product and let it speak for itself. That closeness, that desire to make every experience memorable, is what makes Pabú a place where you don’t just eat well — you feel truly welcome.

Tell us a little about the concept of Pabú and what you try to offer your diners.

At Pabú I try to offer fresh gastronomy, which changes every day and adapts flexibly to each customer. We take the utmost care of those who visit us and seek to create a network of friends who come back time and time again because they know they will always find something different.
Who are your main allies in this creative process?
Coco Montes /
Without a doubt, my most important allies are
suppliers and customers. The suppliers are the basis of everything. They give me the product with which I can create; without them, nothing would be possible.

What defines a good supplier for you?
Coco Montes /
A good supplier is one that offers products of outstanding freshness, delivers on time and maintains clear and efficient communication.
The most important thing is that the product is excellent; if that fails, all else fails.
So, would you say their role goes beyond supply?
Coco Montes /
Absolutely. A supplier who selects the product well is essential, because we each have our field of specialisation. They know their raw material better than anyone else, so that first filter they make is fundamental. You have to trust the professionals.

Beyond the product: the complete experience

In addition to the product, what other elements are fundamental to the restaurant experience?
Coco Montes /
Everything is important. The choice of glasses, crockery, cutlery, tablecloths, even the bathroom towels. For me, the tableware is key: it is the canvas on which the dish is presented. It must be beautiful, but also neutral so that the experience is seamless. The plate without the tableware is nothing, and neither is the tableware without the food.

In that sense, do you think Bone & White adds value to your work?
Coco Montes /
Very much so. His value is not only in helping me choose the right tableware for each dish, but also in making that tableware tell a story that parallels my own, that enhances the ingredients and elevates the whole experience.
Today we have brought for this interview a French porcelain tableware, Teak, which is inspired by the cuts of teak wood. This collection comes from one of the most historic and reputable houses in France. It also works very well in restaurants that want to keep the white base but with a subtle touch that elevates the presentation. Did you like it?
